How it all began

Our founder spent years cooking in busy kitchens, where speed overshadowed meaning and ingredients were treated as commodities rather than gifts. There was a longing to return to something more authentic — to cook with the seasons, to celebrate simplicity, and to rebuild a relationship with the land.

So the search began: coastal fishermen who still rise before the sun, farmers who understand their soil like family, foragers who know the forest by heart. These people shaped the foundation of Nordhavn. Their stories, their hands, and their respect for nature became part of ours.

Living close to the coast shaped our philosophy. Here, the environment demands respect — the changing weather, the short growing seasons, the distinct character of local produce. These conditions influence everything we do, from the ingredients we choose to the techniques we use.

Sea, soil, and season determine our menu. When something is at its best, we serve it. When it’s not, we don’t force it.
